Golden soft cauliflower rolls

(Or baps or buns or softies!?)



Golden soft , Cauliflower rolls ,baps or buns 

( what do you call them at home ?)

Anyway ….

I had a cauliflower to use up … and I wanted something different!…

Here is how I made them …. 

1 medium head of cauliflower ( riced) 144 calories 30g carbs) 

2 eggs (108  calories )

1 tablespoon nutritional yeast (24 calories )

4 tablespoons flour (112 calories 24g carbs) ( you can use almond or gluten free or normal … your choice , depending on dietary requirements) 

Salt & pepper to season ( just enough to make a thick batter ) 

1 Tsp baking powder 

Sesame seeds or bagel seasonings ( or toppings of choice , I used a mixture)

Rice your cauliflower in a blender a bit at a time

Then put it in the microwave to cook for 3 to 4 minutes

Let cool

Drain out the excess water by putting rice mixture in a clean cloth or tea towel, and ring it  through until most of the moisture is out

Mix the cold cauliflower rice with eggs and other ingredients

Put Greaseproof paper on a baking tray  put mixture into circle shapes ready for your  “buns”

Sprinkle seeds of choice on top

Cook in a preheated oven at 180 for about 35 to 40 minutes (until firm to the touch and golden)

388 calories & 54g carbs for all 4 big “buns”

So that’s 97 calories & 13g carbs each ! 

I had some lean ham & egg in mine ! 

So it was just under 200 calories & 14g carbs for the whole thing !
