Homemade chicken noodle soup


With leftovers if you like !

Homemade chicken noodle soup


We can all do with a good bowl of homemade soup sometimes.. it’s warm & comforting..


Well here is one of my favourites..


And you can make it as healthy as you like ….


You can use low carb noodles, breast of chicken instigated thigh .. or no chicken at all !!!


But this is what I like to make …


1/2 onion, finely chopped & diced (23 calories & 5.5 g carbs )

3x crushed & chopped garlic cloves

100g, carrots finely diced (41 calories & 6.8g carbs

100 g leek finely choped ( 54 calories & 12g carbs)

100g @aldiuk egg noodles or low carb noodles (138 calories & 25 carbs) today I used egg noodles but I like to use low carb ones sometimes)

200g leftover cooked chicken or Turkey or 200g breast or thigh meat ( whatever you have , breast is less calorie thigh meat slightly tastier! ) (I used skinless chicken breast at 220 calories )

fresh parsley

2x @knorruk stockpots (30 calories & 4g carbs)

salt and black pepper

spray oil


Spray a large pot with oil over a medium high heat,cook off the thinly sliced chicken or Turkey meat a few minutes until starting to colour, then add the onion, carrots, garlic and Bay leaf and fry for a few mins to soften. ( if your using leftover meat then Break up the chicken or Turkey carcass and add to the pot after veg has softened)

Cover with 2 litres of water & add 2 stock pots ( or use your own homemade stock , but I love the ease of stock pots ) - ( I used @knorruk vegetable ones ) and season well with salt and black pepper.Bring to a boil and then reduce heat to low, cover and simmer for approx 1-1 ½ hours.( I popped it in my slow cooker )

Add your egg noodles ( or low carb alternatives alternatives at end of cooking to heat through)

Dig in or divide into pots to freeze …

519.5 calories & 56.3g carbs !


I’d say 6 big portions out of it !
