Keto friendly strawberry jam

It’s my Keto friendly Homemade strawberry jam recipe with no added sugar

Every year I can remember I’ve gone strawberry picking and made some jam ..

So I made this to go on my @exantediet scone again ( recipe for that is in my highlights or grid)

.And it’s LUSH !!!

AND .. With no added sugar at ALL !!!

Ingredients

400 g chopped strawberries 128 calories 30 g carbs

2 tbsp water

1 tblsp ground chia seeds 60 calories 5g carbs

1 tsp lemon juice (optional)

1 tsp @nkdliving powdered sweetener ( optional) 10 calories 4g carbs


Instructions

Chop the strawberries and place them in a saucepan together with the water.

Bring to the boil (with lid on )then turn down the heat to medium and let it bubble away gently for 15 minutes. ((Only add the lemon juice if you want to store the jam for longer than 1 week - it prevents the growth of bacteria. ))

Mash the strawberries with a potato masher ,then continue to cook on low-medium for another 30 minutes until reduced by half. You want it to bubble gently . Stir regularly with a spatula to prevent the jam from burning. Towards the end of cooking, stir constantly.

Taste , and If necessary, sweeten with your sweetener of choice.

Add the ground chia seeds from @hollandandbarrett and stir. Cool and fill into a sterilised jar. Store in the fridge.

***I added some @nkdliving sweetener to mine as my husband wanted some of it as he has a very sweet tooth !

My 400g of strawberries made roughly 200g of jam.

I calculated 1 tbsp as 12g for one portion

. So that’s 16 portions for my jar

. Whole jar is 198 calories & 39g carbs

So one portion is 12.3 calories & 2.4g Carbs
