With Turkey mince

Do you #batchcook for the freezer , and get organised for week / month ahead ?
Well I’ve got cooking for the new month coming, to try and keep as focused as possible ,by making some family friendly meals that I can have too ( if I wish ) but it means I’ve got healthy food for freezer for the Hubster, so he can get out and eat while I concentrate on my food intake.
So , I made this yesterday ,to portion it up & freeze
500g @sainsburys lean turkey breast mince (550 calories & 1.5g carbs)
Spray olive oil @frylighthq
1 medium onion, chopped (55 calories & 10.8g carbs)
3 cloves garlic chopped (39 calories & 6g carbs)
pinch of seasoning
2 x handfuls frozen veg
20g grated @eatlean cheese (for top)
400ml chicken or beef stock, ( I used beef to give it some depth )made from 1 low-sodium stock cube (12 calories & 1.35 g carbs) - and added a tbsp ofgravy granuals to thicken - I was being very lazy !)
Filling-
Heat a large non-stick frying pan and dry-fry the turkey mince until browned. Tip onto a plate and set aside.
Add the oil and gently cook the onion, & garlic until softened, about 10 mins (add a splash of water if it starts to stick). Add the meat for a few mins.
Add the veg and stock ( gravy ) with some seasoning. Simmer for at least 20 mins (or longer) until thickened.
Topping -
Cook your cauliflower and once soft drain and mash up with some butter and seasoning .
Put it all together in a ovenproof dish and sprinkle your cheese ontop of cauliflower layer ( if your doing this bit ) and then cook in oven at 200 until browned..
As I got 6 good sized portions at about 200 calories each ..
So ,one each for Hubster & me & I will freeze down other portions for a later date ..
So comfort food for the freezer that’s healthy too !
