Lazy day Turkey Bolognese

This is a great one for turning leftovers into other meals too !.. it’s one of my go-toos !

🍅 Lazy day Turkey Bolognese 🍅


Ive made this today .. so I could just serve it up when I want it , as I’m having a #lazysunday


I normally add mushrooms and sometimes ham aswell, but it’s fridge clearing day and I’m out of both ( when I got there the cupboard was bare !)

….. Just as tasty tho as I added red wine 🍷 🤤😘


500g @sainsburys lean turkey breast mince (550 calories & 1.5g carbs)

Spray olive oil @frylighthq

1 medium onion, chopped (55 calories & 10.8g carbs)

3 cloves garlic chopped (39 calories & 6g carbs)

pinch of seasoning

1 tbsp tomato purée (5.9 calories &1.4g carbs)

1 x 400g cans chopped tomato (100 calories & 16g carbs)

400ml chicken or beef stock, ( I used beef to give it some depth )made from 1 low-sodium stock cube (12 calories & 1.35 g carbs)

1/2 glass red wine -again this gives a rich flavour..(96 calories & 3g carbs )

Shake or 2 of @skinnyfoodco garlic & herb marinade

Shake or 2 of dried basil


Method

STEP 1

Heat a large non-stick frying pan and dry-fry the turkey mince until browned. Tip onto a plate and set aside.

STEP 2

Add the oil and gently cook the onion, & garlic until softened, about 10 mins (add a splash of water if it starts to stick). Add the meat for a few mins, then add the tomato purée, and cook for 1 min more, stirring to stop it from sticking.

STEP 3

Add the tomatoes and stock with some seasoning. Simmer for at least 20 mins (or longer) until thickened.


Totals 857 calories & 39 g carbs whole thing

So 142 calories & 6.5g carbs per portion 🙂


I’ll be having it with @eat_water pasta , @eatlean shaker cheese !.. so I’ll add extra calories for that ..But that’s only 9 calories per 100g !


As I got 6 good sized portions , it’s one each for Hubster & me & I will make a lasagne out of the leftovers !
