Lighter baked cheesecake

Fir summer it’s perfect.. and lower calories..


🍓Lighter Baked strawberry cheesecake 🍓


( I made the other day & forgot to share !)


Base

6 tablespoons unsalted light butter (425 calories)

200g @gullonbiscuits.uk digestive biscuit (860 calories & 130g carbs )


Cheesecake filling

450 g pot plain @arladairyuk Skyr yogurt(285 calories 18g carbs )

16 ounces @philadelphia_uki reduced-fat cream cheese (666 calories & 23.3g carbs )

3/4 cup @nkdliving icing sugar

4 small eggs ( 216 calories & 0.6g carbs )

2 teaspoons @exantediet vanilla flavour drops

2 teaspoons freshly grated orange zest


I used 40g Skinny food strawberry jam , strawberry jelly & 200g strawberries for topping.

@skinnyfoodco strawberry jam ( 14 calories 9.8g carbs )

200g strawberry ( 64 calories & 15g carbs)


Place a rack in the center of the oven and preheat to 170 c .


Melt the butter in a microwave-safe bowl, or melt it on the stove and transfer it to a bowl. Place a 9-inch greased springform pan on a rimmed baking sheet.


Add the light digestives, with the melted butter. Stir until evenly moistened, then pour into the prepared pan,press the crumbs into an even layer then refrigerate until needed


Mix the Greek yogurt and cream cheese. Once they are partly combined, add the 3/4 cup sugar and blend until perfectly smooth and blended, then add the eggs, one at a time, blending between each. Once the eggs are mixed in ,add vanilla flavour drops , and orange zest.

Mix until very smooth, creamy, and completely blended,

Pour the batter into the cooled crust and smooth the top. Place the springform pan back on the rimmed baking sheet. Bake at 170 in the in center of the oven for 45 to 55 minutes, until the cheesecake is set (The center should jiggle like Jelly- but not be moving like a wave)

Remove the cheesecake pan from the baking sheet and place the pan on a wire rack. Let the cheesecake cool COMPLETELY , then cover the top of the pan with plastic and place it in the refrigerator. Then leave an hour .

Once cooled ,place strawberries around outer edge & top with @skinnyfoodco strawberry jam mixed with @skinnyfoodco strawberry jelly .

Then pop in fridge to set completely .

I got 12 slices at 175 calories & 16.5g carbs a slice ..
