Low carb Banana bread with blueberries

I make this when I have Nannas to use up ! ..


I thought Iโ€™d share my lo-carb homemade Banana & blueberry bread I like to make , when I have some Nannas to use up !

What you need


Cooking spray for the pan ( or baking parchment to line )

3 small eggs ( 162 calories & 0.8g carbs)

3 small very ripe bananas well mashed (200g) (270 calories & 69g carbs )

1 tsp vanilla extract

2 tablespoons ( 30g) @nkd sweetener ( 8.1 calories )

100 g almond flour (612 calories & 6.9g carbs)

100g coconut flour ( 660 calories & 25g carbs)

1 tablespoon ground cinnamon

1 teaspoon baking powder

50g blueberries (28 calories & 7.2g carbs)


Preheat your oven to 180. Line a small loaf pan (8.5 X 4.5 inches) with parchment paper strips, leaving an overhang on each side of the pan. Lightly spray the lined pan with oil.

In a medium bowl, whisk together the eggs, mashed bananas, vanilla, and sweetener.

Gradually whisk in the almond flour, coconut flour ,cinnamon, and finally the baking powder . Whisk until smooth.Then add blueberries.

Using a spatula, transfer the batter to the prepared pan. Gently tap the pan on the counter top to evenly distribute the batter.

Bake the banana bread until browned and set, and a toothpick inserted in its center comes out dry, 35-40 minutes.

Using the excess parchment paper as handles, carefully remove the banana bread from the pan and transfer it to a wire rack. Carefully remove the parchment, to allow air to circulate.

Cool the bread on the cooling rack, Then once Thoughly cool , Slice it into 12 slices and serve.


I freeze in portions and get it out when I need it !


1497 calories & 108.7g carbs


So 12 big slices at - 124.75 calories & 9g carbs each slice


It freezes really well too !
