Batch cooking sundays !!..

Turkey mince bolognese..
I do like to Batch cook on a Sunday !!..

I like to make a meal on a Sunday ( that leaves extra portions for another time !.. )

Today I thought I’d have a #lowcarb &#lowcalorie Turkey Bolognese..
.
Ingredients
400g lean turkey mince (choose breast instead of thigh mince if you can, as it has less fat) ( 596 calories )
Spray @frylight
1/2 large onion, chopped ( 23 calories & 5.5 g carbs)
1 /2 large carrot, grated ( 15 calories & 3.5 g carbs )
200 g mushrooms chopped (44 calories & 6.5 g carbs )
2 x garlic bulbs , chopped ( 9 calories & 2g carbs)
Pinch of Italian herbs
1 tbsp tomato purée
1 can chopped tomato ( 88 calories & 14g carbs )
400ml chicken stock, made from 1 low-sodium stock cube
Heat a large non-stick frying pan and dry-fry the turkey mince until browned. Tip onto a plate and set aside.
STEP 2
Add spray @frylight and gently cook the onion, carrot , garlic until softened, about 10 mins (add a splash of water if it starts to stick). Add the mushrooms and cook for a few mins, then add tomato purée, and cook for 1 min more, stirring to stop it from sticking.
STEP 3
Add the tomatoes, turkey and stock with some seasoning & herbs ,Simmer for at least 20 mins (or longer) until thickened.
Enough for 6 nice portions I’d say !!.. ( that’s how I’ve portioned it out for week !! .. )

Total 775 calories & 31.5 g carbs for whole pot ..
... so if you get 6 portions.. 129 calories & 5.2g carbs..)
I served mine with @barenakedfoodsofficial spaghetti.. & a sprinkle of @eatlean cheese !!
