I made using Exante shakes I had to use up
I made traybakes using some @exantediet packs that I had to use up before the dates ran out
And added a few bits to them ,so it made them more “cake like “ - but still kept it lower calorie & carb
I’m always trying to save the pennies , So ,waste not want not !
I just used what I had to use up , so u can play around with recipe😬
But Here’s how I did them 😬
Bakewell traybakes
@exantediet Bakewell shake 200 ish calories 18g carbs
80g almond flour 457 calories & 18g carbs
20g oat flour 81 calories & 13g carbs
2 large Eggs 144 calories
1 tbsp @nkd sweetner
20g melted butter or coconut oil (your choice) 143 calories
1 tsp Baking Powder
1 tsp Almond Extract (optional)
100ml @alpro no added sugar milk ( or milk of choice ) 13 calories
Filling ( optional )
8x Tsp @skinnyfood co strawberry jam ( or homemade chia jam - the recipe for that is a few posts back )
Preheat the oven to 170 degrees
Grease traybake pan or line with baking paper
Mix all the ingredients ( apart from the jam ) until you get a cake like consistency ( if it’s too thick , you can always add more milk to loosen.
*Never over beat or it can make it go rubbery.
Pour cake batter in the traybake pan & and put the jam in even spaces and cover with batter mix. Cook for about 30 mins .
Carrot cake & date traybake
@exantediet carrot cake shake ( or you could use what flavour you like ) 200 ish calories
80g almond flour ( 456 calories & 16g carbs)
20g oat flour ( 81 calories & 13g carbs )
2x large Eggs (144 calories)
1 tbsp @nkd sweetner
20g melted butter (143 calories)
1 tsp Baking Powder
1 tsp Vanilla Extract (optional)
20g chopped dates ( optional) (57 calories)
100ml @alpro no added sugar milk ( or milk of choice ) ( 13 calories)
Topping
Thick @nkd powdered Erythritol and choppped nuts
Mix all the ingredients together ( apart from powdered Erythritol and nuts ) if it’s too thick , and rememberyou can always add more milk to loosen.
Pour cake batter in the traybake pan
And cook for about 30 mins
(Until skewer is clean )
I got 12 portions out of each tray ( so it works out at 100 & 120 calories a slice ( roughly )
