Spanish chicken
For those that asked for recipe …
( I thought I’d share recipe again as the other one got taken down ?!?.. … my Instagram seems to be playing up or something!!!!?.. )
Ingredients
4 boneless skinless chicken breasts OR 6 boneless & skinless chicken thighs
Spray frylight or olive oil
2x portions @carbxworld rice
1 cup chicken broth
1/2 lemon
chopped parsley - for garnish
Spanish seasoning mix
2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoons ground cumin
1 teaspoon chili powder
1 teaspoon coriander
¼ teaspoon Italian seasoning
In a small bowl whisk together all ingredients for the Spanish seasoning mix. Divide in half and set aside. Cut the lemon in half, then thinly slice one half - for garnish - and reserve the other half for juicing later in the recipe.
Place chicken in a medium bowl. Drizzle / spray with oil, then toss to coat well. Use half of the prepared seasoning mix to rub on both sides of each piece of chicken.
Drizzle a large skillet with remaining oil and bring to medium heat. Cook chicken for 2-3 minutes on each side until browned. Transfer to a plate. (It won't be cooked through at this point)
Put rice, chicken broth, juice from 1/2 of the lemon, and remaining seasoning mix into an ovenproof dish and stir to combine. Add chicken to the on top of the rice. Cover and cook for 20-25 minutes at 180 until tender, and chicken is cooked through.
Garnish with lemon slices and freshly chopped cilantro or parsley and serve immediately.

hiya, just wondered about the chicken. I love skinless, boneless chicken fillets done on george, with green and red peppers, half a vine tomato, some raw red onion and chestnut mushrooms also done on george. then wrapped in iceberg lettuce cups.
How can i use 4 fillets and stay within 200kcal?
Also, could i replace the lamb on scewers with chicken?
The only meat i eat is either skinless, boneless chicken fillets, or pork loin or pork mince. I can't stand lamb, turkey etc. Never have.
I'm also confused as i thought i was only allowed 100g of chicken? im currently on the 800kcal, but want to get to 1,200kcal sooner. I'm stuck at home 24/7, and upstairs waiting to…
