Spicy cauliflower & pepper soup
…as I was feeling a bit under the weather yesterday .. I wanted soup , but didn’t have a lot in my fridge !
So……
It was a whatever I have left in the fridge soup time ….#fridgeforaging at its best !
So …I had ..
1 large cauliflower
Green pepper
Yellow pepper
1/2 onion
2 x cloves garlic
1x @knorruk vegetable stock cube
1 can light coconut milk
1tsp curry powder
1/2tsp chilli flakes
1 teaspoon ground turmeric
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/2 teaspoon garlic powder
1/2 teaspoon ground white pepper
Place the cauliflower in a pot. Add water & boil until tender
Fry off the onion & peppers in frylight , to soften Then add the stock cube , coconut milk, turmeric, salt, ginger, garlic, chilli and pepper; stir to combine; then add cauliflower and bring to a simmer over medium-high heat , reducing the heat as needed, until the cauliflower & peppers are tender , then hand blend until smooth & thick ..
It’s ready to munch or store in fridge or freezer … ( it freezes really well )
I just had mine with some homemade Keto seed crackers that I’ll share recipe of tomorrow ❤️

As I said, I’m not feeling my best , infact , I’ve just got to work & I think I may have to go home if I don’t start to feel better soon & have a duvet day ,and have another bowl of soup for my lunch & binge watch something on tv ! 🥶🫤🫢😬)
